The Bonifacio VIII and Anticolana springs depend on the woodland and the aquifer around them. Protecting the catchment area — its trees, its soil, its hydrology — is the first and least negotiable part of the work.
Bottled at source
Nothing travels before it is sealed. Bottling next to the springs removes transport from the equation and keeps the water's profile constant from rock to table.
